‘The Pioneer Woman’ Ree Drummond Shortcut Ravioli

In The Pioneer Woman Cooks–Super Easy!: 120 Shortcut Recipes for Dinners, Desserts, and More, Drummond says her meal shortcuts are like pressing the “the warp speed button on your favorite recipes.” She reassures her readers, telling then they don’t have to feel guilty about incorporating these shortcuts into their meal planning. Drummond explains the goal of meal shortcuts is to reduce the time spent cooking so you can have more time with your loved ones or extra time to devote to your hobbies.
Some of the shortcut ingredients Drummond uses are canned beans, frozen bread dough, creamy condensed soups, frozen fish sticks, frozen shrimp, frozen stuffed pasta, and microwave rice and grains. Using these ingredients in a meal will help you prepare meals in less time than if you made everything from scratch.
Ree Drummond’s shortcut ravioli
Drummond uses wonton wrappers to make her shortcut ravioli. Some of the ingredients you’ll need for this recipe are ricotta, grated parmesan, arugula, and olive oil.
“I love all kinds of pasta, but there’s something about good ravioli that really makes my heart go pitter-pat,” says Drummond on her Pioneer Woman blog. “I love the flat area of pasta around the filling itself, and I love it when the fork finally cuts into whatever the filling happens to be.”
Drummond says wonton wrappers are the “next best thing” to ravioli that has been made entirely from scratch. This is quicker than making the pasta dough yourself.
“Truly homemade ravioli is to die for,” says Drummond. “There’s absolutely nothing like it. If you have the time and the tools and the inclination, please make the pasta dough from scratch, then please roll it out and fill it and cut it, and then please invite me over so I can have some, too, she jokes.”
The Accidental Country Girl says wonton wrappers are a great substitute for homemade dough because they give you the freedom to experiment with the filling. “You can sink all your effort and creativity into the filling instead of the dough,” says Drummond. During her Today show interview, Drummond recommends getting your children (or any available family members) in an “assembly line” and having them help you assemble each ravioli.
Why Ree Drummond wrote ‘The Pioneer Woman Cooks: Super Easy’
The idea for Ree Drummond’s Super Easy cookbook came about after she found herself spending more time in the kitchen than she wanted. She admits cooking became a “drudgery” after her children came home in April 2020, one month after coronavirus (COVID-19) quarantine orders. Drummond says she “got so tired of the daily grind.”
Drummond’s children are now adults, so they eat more than before. During an interview with The View, Drummond things were stressful because she had to make so much food every day. Since everyone was home, she was cooking non-stop. Her family was eating the food she made so quickly, that she had to constantly make more food.
